In 1997, Mrs. Zeng who had just set food on this land began to work on an assembly line in a packing plant after having spent six month learning French and made her Jewish boss unhappy due to her enthusiasm for helping workmates in work. In the end, the cultural conflicts and different management methods made Mrs. Zeng quitted the job after two weeks. Despite two managers tried to retain her, Mrs. Zeng was determined about her leaving. She would rather lose her job than abandon the traditional Chinese virtues of helping each other. Later on, she worked in a glass factory with a history of 50 years as a technical worker, where Mrs. Zeng’s good conduct and positive attitude were highly appreciated by the French boss. By chance, Mrs. Zeng then made a huge shift in professional occupation. A relative of hers who had run a restaurant for many years and was about to retire saw her hard work and persuaded her to take over the restaurant. Considering that by running a restaurant, she could spare more time for her family and that she had worked as a doctor in China and had dealt with many patients, Mrs. Zeng considered herself capable of handling with various types of people and thus accepted the offer of her relative.
At the beginning when it was short of hands, Mr. and Mrs. Zeng studied recipes and prepared Sushi and western desserts themselves. As they ran the restaurant, due to language barriers, picky customers often made things difficult when it came to communicate. On one hand the couple racked their brains on how to operate the restaurant; on the other hand they had to take care of their juvenile children. It is easy to imagine how much pressures and difficulties they were facing. Especially at the time when the financial crisis made business gloomy, Mrs. Zeng tried various ways to improve economic efficiency so as to reduce costs. Her self-made healthy and tasty cakes and fruit rolls were delicately refined in terms of both appearance and balanced nutrition.
After more than ten years of operation, the restaurant begins to prosper and provides dishes including Sichuan cuisines, Cantonese cuisines and a variety of cakes and desserts. The dishes in Buffet Kalohin are different from other restaurants. According to Mr. Zeng, the dishes in their buffet are different from those of others. Every dish in Buffet Kalohin is fried on a pannikin one by one, delicate and uniquely tasty. There is no doubt that the roast chicken and Sushi are the specialties of the restaurant. The roast chicken is prepared from an improved recipe on the basis of the traditional approach, offering a tender and special taste. What is unique about Sushi is the self-made sauces, for every kind of Sushi is matched with a particular sauce, greatly sought after by customers. Some customers have driven one hour from far, only to taste the unique cuisines in Buffet Kalohin.
Apart from tantalizing dishes, Mr. and Mrs. Zeng have been adhering to the “sincerity and diligence” motto in terms of service and following the principle of “dishes inedible to them can not be served to customers, dishes unappetizing to them can not be delivered to customers” in terms of dietary hygiene. Therefore, the elegant dining environment, first-class sanitation and unique cuisines have won the restaurant a good reputation among customers. Famous across Montreal, the restaurant is praised as the “most delicious fast food” by the local media, the French TV.
Today, Mr. and Mrs. Zeng hope to open a larger chain store and hand the operation to the hands of their daughter who is quiet talented in the field of catering, so that the restaurant Buffet Kalohin full of Chinese characteristics shall survive long on this romantic land and China's food culture shall spread deeper and further.
