A Sichuan restaurant in Houston, Texas, has been repeatedly reported by renowned media in the U.S., because it provides customers with organic, healthy and additive-free food that maintains the material’s original flavor and aroma. Even the red oil- a must for cooking authentic Sichuan cuisine- is hand-made by the restaurant with various raw materials. The name of this famous restaurant is Pepper Twins.

 

Why has Pepper Twins received the recognition from the U.S. mainstream society? Why when so many Chinese restaurant brands have done as the Romans do in Rome after going abroad, Pepper Twins has dared to claim itself a restaurant with authentic Sichuan food? It is because Ms. Yang, the founder of Pepper Twins, has the dream of spreading the traditional culture of Sichuan cuisine from China, in addition to a successive way of restaurant management. In order to fulfill this dream, Pepper Twins has interpreted the secret of Sichuan cuisine and managed to add a “traditional Chinese style” in not only the interior decoration, but also the choice of menus, cooks, materials and flavors. 
        
Startup
Strictly speaking, Ms. Yang was a total amateur when she founded Pepper Twins. For the first few years after coming to the U.S. in 2009, she focused on early-stage cancer study as a MD and received a $445,000 dollars of research fund from the U.S. Department of Defense. She was successful in the field of medical research at that time, but a turning-point in the career came when the doctor suggested Yang taking a break after her longtime exposure to hazardous substances having caused severe health issues. During the months of resting, Yang grew to realize the importance of health and increasingly missed Sichuan food from her hometown. The fact that there was no restaurant with authentic Sichuan dishes across the U.S. motivated Yang to open her own Sichuan restaurant. She had no previous experience in the catering industry, but it didn’t falter her determination. When there is no experience to learn from, you make your own. When there is no business pattern to borrow, you create your own. After multiple attempts, Pepper Twins, a true Sichuan restaurant with the management philosophy of sticking to healthy, green and organic was born.    

 

          

Decoration 
The style of cooking sets a restaurant brand’s direction, while the interior decoration decides its theme and target customers. The interior decoration of Pepper Twins aims to highlight Sichuan cuisine’s essence and deliver it to foreign customers in ways acceptable to them. Therefore, it chooses traditional Chinese style as its main decoration theme, with Chinese paintings on the walls, globally popular patterns on solid wood furniture and plain tableware that matches with the homeliness of Chinese cuisines. A combination of both Chinese and Western theories in the designing of the restaurant’s interior decoration creates a harmonious cultural integration.

Dishes offered by Pepper Twins always stick to the two principles of “authentic Sichuan cuisine” and “healthy, green and organic”. The two principles seem simple, but complement with difficulty.The first priority of cooking authentic Sichuan cuisine is to maintain its original flavor. With the decline of food culture nowadays, keeping a cuisine style’s authenticity requires a detail-oriented attitude. This is how Pepper Twins manages to be a restaurant of authentic Sichuan food. For instance, it hires chefs who have specialized in Sichuan cuisine for over 15 years, offers popular classic Sichuan dishes like Pork Lungs in Chili Sauce, sticks to the most traditional and authentic cooking style of Sichuan food. In cooking, the choice of every ingredient and step has to be right to ensure the taste and flavor at different periods of time. The most crucial is to use the right materials. Therefore, Pepper Twins uses FBO endorsed special grade green prickleyash, transported from mainland China, to make red oil.

 

In recent years, an increasing number of restaurants have marketed to be “healthy, green and organic”, but very few really live up to this standard, because the cost is still extremely high under current circumstance, while the profit is not lasting.    

 

 

 

“Our competitiveness is not particularly great, because we use high quality meat. Our pork is world renowned black pork, our beef is the best Angus certified beef, our chicken meat is additive free and our egg is organic. Most restaurants don’t have the economic strength to buy such materials,” said Ms. Yang. It is the reason why Pepper Twins can stick to the standard.

 

 

Management
Pepper Twins’ success results from its human-based management and high-level power delegation. The restaurant has developed a complete set of training system for receptors and kitchen staffers. Its employees have a minimum education level of master’s degree. Six of its managers graduate from the University of Houston’s hotel management major and two others from the finance and project management major. A pool of top talents provides an excellent foundation for Pepper Twins’ development.  
The core of Pepper Twins’ management philosophy lies in decentralization. Ms. Yang seldom inspects the restaurant herself. She puts full trust in the managers and allows them to be responsible for the restaurant’s marketing strategy, staffing, personnel training, rulemaking and so on. Houston local media, Texas Monthly, Time Out,Culture Map,New York Post and many others all reported extensively on the restaurant.   

 


According to Ms. Yang, the fourth branch of Pepper Twins has opened on September 1 and the fifth, which sets to open by the end of this year, is already under decoration. The catering market in the U.S. at present is not as thriving as it looks, but Pepper Twins stands out with its successful management mode and theory.
