When it comes to Shanghai cuisine, Xiaolongbao (Chinese Soup Dumplings) is definitely the most famous. As a traditional Shanghai dim sum, Xiaolongbao has enjoyed a long standing fame. As it’s very tiny with thin and semi-transparent flour skin and is steamed in a basket, people call it Xiaolongbao (literally meaning little-basket steamed bun). Pick it up gently, move it slowly, break the skin first and then suck out the soup. This sentence sums up the timeless feature of this classical Shanghai cuisine, Xiaolongbao. Nowadays, in Irving, there is also a restaurant serving very authentic Shanghai cuisine - Fortune House Chinese Cuisine.

 

In May 2015, Fortune House Chinese Cuisine officially opened in Irving. Entering the restaurant, customers would first be greeted by the spotless dining tables and 36 French windows. The environment is bright and clean, comfortable and pleasant.

 

The restaurant mainly serves Shanghai cuisine and cold dishes but also provides American Chinese cuisine and a few kinds of Sichuan dishes. Among all the foods it provides, dim sum and cold dishes are the most popular. Among all the delicate dim sum, Xiaolongbao and Sheng Jian Bao (Pan-Fried Pork Soup Dumplings) are most people’s favorite. Inside the ultra-thin glittering and semi-transparent flour skin, the restaurant’s Xiaolongbao is stuffed with select Japanese streaky minced meat, and thick and creamy soup. With its original shape, fresh and savory taste, hundreds of baskets of Xiaolongbao will be made and sold out every day. Endless flow of customers come to the restaurant because of its reputed Xiaolongbao. A lot of customers even exalt it by saying it’s better than that made by Din Tai Fung (Din Tai Fung is a world renowned Xiaolongbao restaurant chain from Taiwan, which was named one of the top ten restaurants in the world by The New York Times in 1993). There’s a bar serving alcohol drinks and other beverages in the restaurant. Nowadays, many non-Chinese have come to love Chinese tea. Here, they’ll be able to enjoy quite a few kinds of high quality tea.

 

The restaurant has three chefs, each responsible for American Chinese cuisine, cold dishes and Shanghai cuisines respectively. Chef Ren Guoqing was once the head chef of the famous restaurant Shanghai River Restaurant in Vancouver and is highly reputable. The Chinese dishes made by him are just art masterpieces. Chef Zou Guifeng has also received professional training and gained the qualification as a head pastry chef. He is well-known for his special skills of making traditional Chinese Jiaozi (dumplings). In Fortune House Chinese Cuisine, each dish is made by professional chefs, with the smooth assistance from other staff members. In this way, the restaurant has achieved fast serving while still ensuring the food is delicate and delicious. There’s a small blackboard in the restaurant, on which 2 to 3 new dishes will be listed each Friday morning. If these new dishes are well-received and praised by customers, they will be included in the menu while the less popular ones will be removed. Prosperity comes from commitment. By constantly innovating, and transcending previous efforts, Fortune House Chinese Cuisine seldom has any empty table and is always bustling with satisfied customers.

 

Success Lies in a Caring Mind

 

Located in the central business district, competition is especially fierce. Despite this, Fortune House Chinese Cuisine still stands out in its local area for its unique tastes. The success lies in its owner Lucy’s caring mind and constant efforts.

 

Lucy is a very approachable Asian female who has run recreation businesses, bars, clothing stores, cosmetic stores etc. It’s hard to believe that this should be her first time to open a restaurant because her restaurant has succeeded with flying colors.

 

When asked about her experience in running a restaurant, Lucy said location is very important. At the beginning, she loved this area for its business environment, with shopping malls, supermarkets, banks and high-grade residential areas nearby. So she decided to choose this place to build her first restaurant. However, what’s more important than this is to have a caring mind and make conscious efforts. Since this is her first try in the restaurant industry, for lack of experience, Lucy started from what she was best at, authentic Shanghai dim sum, and created some delicate dim sums. As the weather is hot in the area and most restaurants here provide warm dishes, Lucy tried her hand at cold dishes and it turned out to be successful. This, combined with constantly innovating new dishes and collaboration between the chefs and other staff members, has made the restaurant increasingly popular. In this process, there has arisen numerous issues. When faced with problems, Lucy thinks if you try to think them over, gain experiences through solving them, you’ll become better at it. Almost every day, Lucy will be in the restaurant, checking hygienic conditions and the dishes. Even if it’s just a brief visit, she would drop in and check everything briefly. Lucy is also very considerate to her employees. Sometimes when they are too busy to prepare for staff meals, she will order takeaways for them. At times, she will also provide some incentives and awards to increase employees’ motivation.

 

Looking into the future, Lucy said, Fortune House Chinese Cuisine is the first restaurant she has run and there are still a lot of things for her to learn, improve and upgrade with a caring mind. She hopes Chinese cuisines will spread to more places in America to allow more Americans to enjoy the great tastes of Chinese foods.

 

In December 2016, in the competition “the Best Asian Food in USA” (organized by Asia Star TV, with 366 top Chinese restaurants in the US participating), Fortune House Chinese Cuisine received a score of 95 from the gourmets and ranked TOP 3 in the final.
