The broad array of options showcases many renowned specialties from Xi'an, with each dish being a true reflection of a thousand years of passion. The owners, Shanyan and Gaobaoshan, are authentic Xi'an locals who are meticulous about their choice of ingredients and seasonings, as they believe that only genuine ingredients can deliver a true Xi'an flavor. As a result, even the tiniest spices, like chili powder, are transported by air from Xi'an, reflecting a genuine commitment in spite of great distances, ensuring that every guest can savor the finest local tastes of Xi'an. 

With more than two decades of culinary expertise, Mr. Gaobaoshan, the owner and head chef, possesses an intimate knowledge of Xi'an cuisine and prepares it effortlessly. Mr. Gao emphasizes the importance of preparing each flour-based meal from scratch daily, achieving consistent chewy and tender texture through extensive kneading and stretching techniques. The making process of Cold Noodles, the signature dish of the restaurant, is particularly intricate and time-consuming. After mixing the dough and letting it rest for a while, the dough needs to be kneaded multiple times with water, and then the starch solution is let settle for 6-8 hours. After that, the remaining water and starch solution are stirred carefully, followed by steaming. Mr. Gao is knowledgeable about the appropriate strength and blending ratios at each step, allowing him to maintain superior quality and flavor of Cold Noodles. The fusion of the thin Cold Noodles with freshly shredded cucumber, bean sprouts, gluten, sesame sauce, chili oil, and additional ingredients tantalizes every diner’s taste buds with its unique freshness that belongs to the street cuisine. The refreshing chill of the cold noodles, the crispness of the veggies, the spiciness of the chili oil, and the smoothness of the garlic sauce together narrate, much like a profound poet, the ease and solace found in everyday existence. 

Each person perceives comfort in their own way, and for the people of Xi'an, Chinese Pork Hamburger serves as a source of solace throughout the day. The snack is crunchy on the outside and soft on the inside; the meat, enveloped in a delicious sauce, is fragrant and rich, fatty yet light, and lean without being dry. As you take a bite, the scent of meat and bun blends together, evoking a journey through centuries, relishing the historical essence of the ancient city. 

The most representative dish of Xi’an as the capital of carbohydrates is the BiangBiang Style Noodles. It is a bowl of smooth, chewy hand pulled noodles that wrap around your tongue like silk; topped with vibrant red chili powder and chopped green onions, the enticing “sizzling” sound fills the air, as the scent of minced garlic, the heat of the chili powder, and the hearty nature of the noodles awaken your senses. Other specialties like Quick-fried Tripe Noodles, Mutton Soup, Haslet Soup, and Kudai Noodles are also made fresh and are full of rich flavors.
